28 Fis h Slow cooking meat Slow cooking is the ideal cooking method for all tender pieces of m eat wh ich are to be cooke d me dium ra re o r à poin t. The meat remains very juicy and turns out as soft as bu tt er. Slide t he baking tray into the combination s team oven and preheat with t he Slow cook operating mode.
29 Y o ghurt Heat the milk t o 90 °C on th e h ob. T hen l e ave to cool to 40 ° C. If you ar e using UHT milk, you d o not need to h eat i t. Sti r i n one to two teaspoons of natural y oghurt per 100 m l m ilk, or the corresponding amount of y oghurt culture into the milk.
