13 ClimaPlus ® Contr ol Pr ecise automatic humidity control U se ClimaPlus Control to set, measur e and maintain desired humidity in the cooking environment. ClimaPlus is a patented technolog y that precisely and automatically measur es and controls the amount of humidity in the cooking climate.
14 Capabilities ClimaPlus works by constantly monitoring and contr olling the level of humidity in the cooking environment. M ost foods release moisture into the air as they cook, naturally building excess humidity in the cabinet. When humidity rises above the set level, ClimaPlus r emoves excess moistur e.
Operating the ClimaPlus ® Combi In this section: Cooking M odes Cooking Functions Cleaning Installation The following section pr esents in some detail a complete overview of the operation of your H enny P enny ClimaPlus Combi.
16 Cooking M odes ClimaPlus Combis have two basic cooking modes: M oist H eat and Dr y Heat. These two cooking modes can be used individually , in sequence, or together in a thir d Combination mode. Almost all tr aditional cooking processes can be accomplished in these modes.
17 M oist H eat M ode 212°F (100°C) P ressur eless steam gener ation and auto-rev erse fan quickly produce a cooking environment of 100% humidity . P erfect for steaming a wide variety of foods with no flavor tr ansfer . Also used for stewing, blanching, poaching, simmering, soaking, thawing, r ether malizing, preserving.
18 Operation and Settings ■ T urn unit on. ■ Select MOIST HEA T mode and set TIMER on Continuous Run. Only blue bars appear in ClimaPlus window indicating 100% moist heat. ■ P reheat until temperature r eaches 212 ° F (100 ° C), or to desir ed temperature.
19 T ender S teaming 85-210°F (30-99°C) A gentle cooking application in Moist H eat mode that uses steam with less air turbulence at temper atures belo w the boiling point. U se T ender S teaming for scalding, poaching, thawing, proofing, simmering, blanching, r ethermalizing, soaking, vacuum cooking, and pr eser ving.

21 F orced S teaming 213-265°F (101-130°C) A cooking application in Moist H eat mode using additional heat to allow full-humidity steaming at temper atures w ell above boiling. F orced S teaming is excellent for cooking dense products, such as root v egetables and frozen casseroles.

27 R ethermalizing Rethermalizing is a cooking application that utilizes a combination of moist and dry heat plus ClimaPlus Control to maintain flavor and textur es when bringing chilled cooked foods back up to serving temperatur es. Advantages ■ Differ ent food products can be reheated without being cov ered.

Cooking F unctions ClimaPlus Combis featur e a host of digital controlled functions that can be employed to cr eate the per fect cooking environment for pr actically any type of food. These functions also help automate the cooking process, saving labor and providing consistent r esults, load after load.
30 P robe Cooking with IQ T Sensor The P robe Cooking function allows the oper ator to select the food’ s desired “ done ” temper ature. The IQ T Sensor probe is inserted into the food to measure the actual internal temper atur e of the food as it cooks.

Capabilities +Low-T (lo w temperature) is a gentle cooking process designed for cooking large roasts o ver a long period of time.

51 A dditional functions: S team Injection S team Injection is a keypad function enabled in Dry H eat mode that, when activated, spr ays a four-second burst of water onto heating elements, cr eating an immediate and brief humidified environment in the cooking cabinet.
52 A dditional functions: Half S peed F an H alf Speed F an is a keypad function that reduces fan speed by one-half to produce less turbulence in the cooking environment. Advantages ■ Maintains a gentle cooking environment for light pastries, custar ds and other items with exposed fillings.
COOL DOWN 53 Tips ■ When cooking large roasts, use P ulse F an when core temperature reaches 140 ° F (60 ° C). ■ The existing heat in the cabinet and from the bulk of the roast is enough to complete the cooking process with P ulse F an operation.
PROG ST ART Cleaning Y our ClimaPlus ® Combi MUST be cleaned at least once a day to ensure proper sanitation and continued trouble-fr ee operation. Daily cleaning can be accomplished in two ways: ■ Conventionally using M oist Heat mode and/or pr e-set cleaning program.
STEP 0 CLEANJET 55 U sing CleanJ et ® ClimaPlus Combis ar e now equipped with CleanJ et, a unique, patented system that cleans and rinses the cabinet interior with no labor or supervision whatsoever .

I t is recommended that installation be accomplished by a certified and properly trained technician. NO TE: When installing a ClimaPlus combi, humidity calibration must be performed.
