1-1 H14/H17/H22 SE RIES ELECTRIC FRYERS CHAPTER 1: I NTRODUC TION 1.1 General This manual covers all configurations of models H14/H17/H22, including filtration options and triac-equipped (solid-stat e relays) models.

2-2 DA NGER Do not attach an apr on drainboard to a single fry er. The fr yer may become unstable, tip over, and cause inj ur y. The appliance area must be kept free and clear of combustible materia l at all times.
2-3 DA NGER Frymaster fry e rs equipped w ith legs are for permanent installations. Fry ers fitte d with legs must be li fted during movement to a void damage and poss ible bodily injury. For a moveable or portable inst allation, Fry master optional equipment casters must be used.
3–1 H14/H17/H22 SE RIES ELECTRIC FRYERS CHAPTER 3: OPER A T ING INS TRUCTI ONS 3.1 Start- Up Procedure WARNING The on-site supervisor is responsibl e for ensuring that operators are made aware of the inherent hazards of operating a hot oil filtering system, particularly the aspects of oil filtration, draining and cle aning procedures.
3–2 For units equipped with other than solid state (analog ) controllers, place the comput er or controller ON/OFF switch in the ON position and set the contr oller to – or program the compute r for – the desired fr ying tem perature, ref erred to as the setpoint .
3–3 WARNING Do not drain boil-out solution into a shortening disposal unit, a built-in filtration unit, or a portable filter u nit. These units are not intended for thi s purpose, and w ill be damaged by the solution. 6. Rinse the f r ypot at lea st twice by filling the fry pot with clean water and draining .
4-1 H14/H17/H22 SE RIES ELECTRIC FRYERS CHAPTER 4: FILTR ATION INS TRUCTI ONS 4.1 Draining and Manual Filtering: Non-Filtration Fry ers DA NGER A l low oil/shortening to cool to 100ºF (38ºC ) or lower before draining to an appropriate container for disposal.
4-2 4.2 Built-In Filtration Sy s tem Operation Both the FootPrint III (FP III) and Filter Magic II (FM II) filtration systems allow the cooking oil or shortening in one fry pot to be safely and efficiently filtered while the other frypots in a battery remain in operation.
4-3 NOTE: If changing filter paper, remove the crumb tray and paper hold-down rin g and clean with a solution of hot water and dishwashin g deterg ent. Remove and discar d the used filter paper. Be careful , the oil-soaked p aper may be very hot and m ay cause burns.
4-4 5. Push the filter pan bac k into the fr yer, positioning it all the way to the bac k of the cabinet. ( Some older filter s ystems ha ve a green HEATER ON indicator, which will light when the assembly is properly positioned.
4-5 2. Install the Power Show er (if th e fr yer is so equipped). Remove the basket support rac k from the frypot, raise the elem ent ass em bly to th e up posit ion, and snap t he Po wer Sh ow er int o posit ion. DA NGER DO NOT operate the filter w ithout the Power Shower in place unless unit i s configured with a rear flush option.
4-6 WARNING The filter pump is e quipped with a manual re set switch in case t he filter motor overheats or an electrical fault occurs. If th is switch trip s, turn off po w er to t he filt er syst em and allow the pump motor to cool 20 minutes before a ttempting to reset th e switch.
5–1 H14/H17/H22 SE RIES ELECTRIC FRYERS CHAPTER 5: P REVENTATIVE M A I NTEN A NCE 5.1 Cleaning the Fry er DA NGER The crumb tray in fr y ers equipped with a filt er sy stem must be emptied into a fireproof container at the end of frying operations each day.

5-3 4. Simmer the solution for 45 minutes to one hour. Do not allow the water level to drop below the bottom oil-level line in the frypot during boil-out operation. WARNING DO NOT leav e the fr yer unattended during the boil- out process. If t he solution foams excessiv el y and overf low s, press the ON/OFF switch to the OFF position immediately .

6-2 6.2 Troubleshooting 6.2.1 Control and Heating Problems Problem Probable Causes Correct ive Action A. Power cord is not plu gged in or circuit breaker is tripped. A. Plug power cord in and verif y that circuit breaker is not tripped. B. Controller has failed.
6-3 Problem Probable Causes Corrective A ction Fryer repeated ly cycles on and off when first started. Fryer is in melt-cy cle mode. This is normal for fryers equipped with CM III computers, Basket Lift Timers, and Digital Controllers .
6-4 Problem Probable Causes Corrective A ction Fr yer heats until high-limit trips without heat indi cator ON. Contactor or controller has failed. If availa bl e, substitute a controlle r known to be working for the suspect controlle r. If the substitute controller functions correctl y, order a new controller fr om FASC.
6-5 Problem Probable Causes Corrective A ction Basket li ft timer display shows . Problem wit h the tem perature measuring c ircuitry including the probe. This indicates a problem within the temperatur e measurin g circui tr y that is beyond the scope of operator troubleshooting.
6-6 Problem Probable Causes Corrective A ction CM III or Digital Control ler display shows . Frypot temperature is more than 21º F (12ºC) below setpoint. This display is normal when the fryer is first turn ed on an d may appear for a sho rt while if a lar ge batch of frozen product i s added to the frypot.
6-7 Problem Probable Causes Corrective A ction Solid state controller trouble light ON and heating m ode light ON. Open drain valve or prob lem with latching circuits Verify that the drain valve is fully closed. The frye r will not function if the drain valve is not fully closed.
6-8 Problem Probable Causes Correct ive Action A. Improperl y insta lled filter pan components. A. If using filter paper or pad configuration, verif y that filter screen is in bottom of pan with paper or pad on top of screen. Verif y that o-rings are p resent and in good condition on filter pan connection fitting.
