24G SERIES FLATBOTTOM GAS FRYERS CHAPTER 1: SERVICE PROCEDURES 1-1 1.1 Functional Description 24G Series Flatbottom gas fryers c ontain a welded steel fry pot (mild steel) with heat-transfer ducting on the frypot bottom for efficient heating of oil w ithout scorching.
24G SERIES FLATBOTTOM GAS FRYERS CHAPTER 1: SERVICE PROCEDURES 1-2 Pilot System Configuration The pilot system is the pilot orif ice, pilot hood, and a thermocouple. The pilot serves two purposes. The first is to light the burner, the second is to heat the thermocouple.

If th e temperature is 150°F (66°C) or above, the current flows through a heat circuit, bypassing the timer switch.

In the event that the fryer fails to proper ly control the oil temperature , the high-limit therm ostat prevents the fryer f rom overheating to flash point.

24G SERIES FLATBOTTOM GAS FRYERS CHAPTER 1: SERVICE PROCEDURES 1-18 10. Remove firebox back, along with insulation from back of frypot. From the rear of the unit, use a prying bar to carefully pry the top assembly from the frypot and cabinet frame (single units only), and set aside.

Use spray adhesive ( Zep Aero Tac High-Strength Spray Adhesive or equivalent) to install new insula tion in firebox bottom as shown.

24G SERIES FLATBOTTOM GAS FRYERS CHAPTER 1: SERVICE PROCEDURES 1-22 If the fryer’s gas and air supplies are okay, the pr oblem most likely is with one of the electrical components. Examine the ignition m odule for signs of melting/distortion and/or discoloration due to excessive heat build-up in the fryer.
24G SERIES FLATBOTTOM GAS FRYERS CHAPTER 1: SERVICE PROCEDURES 1-23 1.8.3 Improper Temperature Control Temperature control, including the melt cycle, is a function of several interrelated components, each of which must operate correctly. The principal co mponent is the temperature probe.

Disconnect power to the filter system. 2. Remove the front cover of the pump to access th e gears inside, if the p ump is accessible while still inside the cabinet.

When installed or replaced, each of these component s must be sealed with Loctite PST567 sealant or equivalent to pr event leakage.
